White Chili con Carne
White Chili, just like its brother is closer to Tex-Mex cuisine. But is enjoyed on both sides of the border. It is based on white beans and fresh green peppers, usually fresh ancho and serrano, but any fresh green pepper will do.
In the recipe below we used fresh jalapeños and turkey. But you could use chicken or even fish and it woudl turn out good.
Ingredients
- 1kg turkey breast cubed
- 3 large green jalapeños chopped
- 750gr white kidney beans
- 1 large white onion chopped
- 3 or 4 garlic cloves minced
- 1 tbs olive oil
- 4 cups chicken broth (or turkey broth)
- 1 tsp oregano (minced or dry)
- 2 tsp cumin powdered
- 100gr cheese grated
- 1 tbs coriander chopped
Instructions
The night before, soak the beans in water so they will be ready the next day, you can renew the water the next morning, and use the bean water to water your plants. Plants love bean water.
Bring out your cast iron pot and set it on high heat. Add the olive oil and quickly sear the turkey so that the inside is raw and the outside is brown and white. After that take the turkey out of the pot and add the onions, when they turn transparent add the garlic and wait another 2 minutes stirring ocasionaly.
Next add the broth, the beans and the cumin powder. When it boils set the heat to medium and cook those beans until they are tender. This should take at least 90 minutes. Every now and then taste a bean to see if they are soft.
When the beans are done add the turkey, the oregano and the jalapeños. If you leave in the insides of the jalapeños your stew will be hotter, take them out for mild heat. While you wait remove some of the beans and crush them with a wooden spoon, add them back in to thicken the stew.
After 10 to 15 minutes the turkey will be done and you can serve the stew into bowls adding the grated cheese on top. To melt the cheese you can put the bowl in the oven for 5 minutes. To give it a nice finish add the coriander on top and provide your guests with some fresh lime wedges.
This stew will serve 4 to 5 stew lovers.
